2 Tbsp liquid chicken stock
1 ½ tsp lemon juice
1 Tbsp olive oil, divided
1 ½ tsp light soy sauce
½ tsp dried rosemary
1 ½ garlic cloves, minced
¼ tsp pepper
3 skinless chicken breasts
In a zip lock bag, combine the chicken stock,
lemon juice, oil, soy sauce, rosemary, garlic and pepper. Add chicken. Seal bag and turn
to coat. Marinate for at least one hour. Drain
and discard marinade. Cook chicken until cooked through.
¾ cup diced tomato
¼ large cucumber, coarsely chopped
2 Tbsp diced red onion
2 Greek olives, pitted and chopped
2 Tbsp chopped fresh parsley
2 Tbsp crumbled feta cheese
1/8 tsp dried oregano
Black pepper to taste
2 tsp low salt liquid chicken stock
2 tsp water
2 tsp red wine vinegar
½ tsp lemon juice
¼ tsp olive oil
Dash of black pepper
Combine first 8 ingredients in medium bowl.
Combine rest of ingredients except greens together
in a small bowl; stirring well. Pour liquid
mixture over the tomato mixture, tossing well to
coat. Cover and chill for 1 hour before serving.
Serve on fresh greens.
